Why Water Takes So Long to Heat Up Compared to Metal

Specific heat capacity measures how much energy is required to raise the temperature of a fixed mass of a material by one degree, and materials vary enormously in this property, which is exactly why some substances heat up and cool down quickly while others resist temperature change far more stubbornly for the same energy input. Water has an unusually high specific heat capacity compared to most common materials, which is precisely why a metal pan handle becomes dangerously hot within moments on a stove while the water inside the same pan takes considerably longer to reach the same temperature, both receiving heat from the same source at the same time. This property has consequences well beyond the kitchen, since water’s high specific heat capacity is a major reason coastal climates experience milder, more stable temperatures than inland areas at the same latitude, because large bodies of water absorb and release substantial amounts of heat energy while their own temperature changes only gradually, moderating the surrounding air temperature through the seasons in a way drier inland regions, lacking that same thermal buffering effect, simply don’t experience to the same degree.
